Physical appearance plays an important role in this story, whether it be about Jane's plainness, or Rochester's eloquence. I found this quote quite interesting because Rochester is being described as rather plain and boring himself, I mean let's face it, being called a statue isn't exactly flattering or what you'd consider a desirable way of someone to see you. I wouldn't. As I was saying, Rochester is described rather boringly, which is more often than not what Jane is described as. Based on physical appearance it was nice to see these to on the same level or status, finally equal.
